Thukpa is a Spicy rice noodle clear soup most commonly serve in
Tibet but also popular in Bhutan, Nepal and some parts of India.
Thukpa is widely available in restaurants of these place and it is
consider a healthy food.This recipes if just one of the multiple ways
the soup is prepare. Hope you enjoy the first one of many vegetarian

Prep 30 min hour Serves 4

Ingredients

3 tb sesame oil
1 tb garlic, chopped
1 tb fresh ginger, grated
1/2 cup shallots, diced
1 tablespoon freshly squeezed lime juice
1 tsp. kopan masala (you can make it or buy it)

2 fresh red chili peppers
1 tsp. curry powder
1/2 tsp. turmeric
1/2 cup carrot, julienned
1/2 cup red bell pepper, julienned
1/2 cup celery, julienned
1 cup tomatoes, diced
4 cups vegetable stock
4 oz. fresh wide egg noodles
1/2 cup chopped spinach
1 tb low sodium soy sauce
Pepper to taste
1 tablespoon chopped cilantro (to garnish)

Preparation

1.Heat oil in pan and saute ginger, garlic, and onions until slightly
translucent
2. Add spices and cook for one more minute
3. Add all the vegetables julienne, tomatoes, and stock and bring to
boil
4. Lower heat and simmer until vegetables are tender
5. Add egg noodles and cook until tender
6. Add spinach and cook until soft
7. Add low sodium soy sauce and pepper to taste
8.Serve hot in a bowl , squeeze some lime juice garnish with cilantro
